Altitude, 500 ml unfiltered olive oil from Rincón de la Subbética

The unfiltered extra virgin olive oil of Rincón de la Subbética is particularly fresh and rich, because it comes from the first day of harvest. On the first day of the olive harvest, the fruits still contain a little more bitter substances and therefore more of the healthy polyphenols. Therefore, not only the taste of the high-class organic oil is very typical and aromatic, but its health value is also higher than in oils pressed from ripe olives.

Unfiltered olive oil from Rincón de la Subbética is cloudy because it is bottled directly after pressing, without filtering. The fact that small suspended particles settle at the bottom of the bottle over time is a natural process, but it does not affect the quality of the top oil. However, it is especially important for the naturally cloudy, unfiltered olive juice to be stored in a cool (not in the refrigerator), dry and dark place. You should consume the opened bottle within a few weeks.

Already the name "Altitude" lets guess that at Rincón de la Subbética is not harvested at sea level. On the contrary, the olive grove in the Sierra Subbética is located in a karst mountain range. Porous and fissured rock makes olive growing difficult, as does the unusual altitude. While other olive growers drive through their olive plantation with huge harvesting machines, at Rincón de la Subbética a lot still has to be done by hand.

Only with a lot of dedication, heart and soul and elaborate working methods can the olive grove be cultivated so that an incomparable, pure oil can be produced from the fruit of the carefully tended Hojiblanca trees. When you sniff your nose over the opened bottle, you can smell the wonderful fruity freshness of the olive juice. Almazara de la Subbética is located within the rugged mountainous territory. This territory is in the vicinity of Sierras Subbeticas national park that lies in the south of the Province of Cordoba- Andalusia, Spain. Almazara de la Subbética is first-level agriculture cooperation which was founded in 2007 when two prestigious and experienced cooperatives: S.C.A Vigen del Castillo and S.C.A Olivarera Nustero Padre Jesus Nazareno decided to conjoin their professional experience and convert it into one company.

Every land on earth is known for the distinctive properties and particular production it yields, similarly, for more than 3000 years, Spain is known as the land of olives. Its soil has such unique chemistry which is perfect for the enriched, flavorful olive growth which no other soil holds in the world.
