How to made Homemade Mayonnaise with Extra Virgin Olive Oil:

Ingredients

  • 3 eggs
  • ¼ cup fresh lemon juice
  • 1 tablespoon salt
  • 1 teaspoon Dijon mustard
  • 1.5 cup Extra Virgin olive oil
  • Salt for taste

Procedure

  1. I took 3 eggs and ¼ cup of lemon juice and 1 tablespoon salt and kept in a high speed mixer for 10 seconds.
  2. Extra virgin oil is poured slowly, slowly as blender is running.
  3. After completing mixing, stored it in refrigerator and used within 2 weeks.

Instructions

  • Egg yolk, lemon juice, water and mustard are kept in a tall container. Then olive oil should be poured. 
  • Use immersion blender to mix mayonnaise thoroughly.
  • Kosher salt should be added to give flavor.
  • Mayonnaise must be kept in refrigerator for several weeks.

Can I Cook With Virgin Olive Oil?

But the amount of polyunsaturated fats in the olive oil is just 15% and major portion is monounsaturated fatty acids that are 73% and 13 % are purely saturated fats. And this amount shows that olive oil is less likely to be Oxidative damage.

Smoke Point

It is the point of temperature after which oil starts degenerating. Or greenish color is produced. Oxidation leads to more smoke point hence more harmful. And also the more an oil is unsaturated, it leads to the more smoke point. Sometimes when butter is heated it produces smoke that is not mixed with the smoke point. Because water is released in it when butter is heated. And olive oil has less smoke point than other oils so it is the safest oil to be used. Olive oil has 200-249 degree Celsius smoke point. It is varied because it is totally dependent on quality, freshness and care.

If someone wants to make food delicious, extra virgin olive oil is best from all oils including olive oil. Because it contains more olives and least amount of oleic acid that is not good for health and contains more minerals and vitamins that are healthy for humans.

We can use extra virgin oil in baking products because olive oil can be used in the oven but smoke point must be considered. And when olive oil is used in baking it has to bear temperature of more than 220 degree Celsius, which can burn the oil and can make the food unhealthy or distasteful. So care should be needed when olive oil is used in the oven.
