Vinagrerías de Haro: Balsamic Vinegar for Gourmets
Originally, balsamic vinegar is a specialty from Italy. There, the Aceto Balsamico di Modena Tradizionale is produced under its legally protected name only in the provinces of Modena and Reggio Emilia, and strict rules apply. An vinegar may only call itself "Aceto Balsamico di Modena Tradizionale D.O.P." under the following conditions:
- It consists only of cooked grape must.
- It contains no preservatives or colorings.
- It must mature for at least 12 years.
- All production steps must take place in one of the aforementioned regions.
- The raw materials must also come from one of the two Italian provinces.
The designation "Aceto Balsamico di Modena I.G.P." is also protected. A vinegar with this name must meet slightly less strict requirements:
- It may be a mixed product of grape must (minimum 20% share) and wine vinegar.
- Its acidity must be at least 6%.
- E 150, sugar caramel, is permitted as an additive.
- Only one production step must take place in one of the two aforementioned regions.

Nevertheless, its production follows the time-honored method. Its acidity is 6 percent and it matures for 10 years in oak barrels.

Unfortunately, the term balsamic vinegar is often misused. Because this name is not protected, no requirements must be met for its use. This means you can call any vinegar you buy at the supermarket and color brown with a little sugar caramel a balsamic vinegar. It is made from 80 percent red Tempranillo grapes and 15 percent white Viura grapes.
