In order not only to do justice to organic cultivation, but also to perfect it through sustainable agriculture, Deortegas also uses all by-products that arise during cultivation and oil extraction:

  • Olive pomace from the oil mill as well as leaf waste and cattle manure are used as compost.
  • The olive pits form a biofuel to maintain the temperatures of the plant in the oil mill.
  • Fallen olive leaves are used as cattle feed.
  • Waste from pruning the olive trees is shredded and used as fertilizer.

Once the olives have reached their ideal ripeness by mid-October, they are carefully harvested. Only fruits that were taken directly from the tree are used for processing. Picking it up from the ground is taboo. This ensures the top quality of the olives, which is reflected in the wonderfully fruity taste of the finished olive oil.
