|Elaboration process:||Extracted from the maturity in barrel of wines from Pedro Ximénez grapes. Ecologic wine vinegar from the A.O. Montilla-Moriles that is later stored in butts previously soaked with oloroso wines during a period of six months, and from which they gain its very characteristic aromas. This vinegar obtains its others well-known properties thanks to its later maturity in wood.|
