For the preparation of this sweet pepper with DOP La Vera, the fruits are harvested when ripe and only the healthy and clean pods are used. The selected peppers are dried with oak and holm oak firewood in smokers on Finca la Barca's own yards. The controlled smoking process takes about 15 days. Centuries-old stone mills are then used to grind until the precious “red gold”, our paprika, is finely ground. At that moment, our Finca la Barca paprika achieves the best aroma and flavor and its noble red color, unique and incomparable in the world.
